Summer Abundance & our Angus Harvest

After a slow start to Spring across the Southern Highlands, mostly owing to dryer than normal conditions, cold temperatures and high winds, Summer finally rolled in across Clavering Hill and brought with her an abundance of gifts. Long warm days that initiated incredible growth in our pastures, regular rainfall, often in the evenings, ensuring that the rain soaked into the paddocks to create the beautiful, humid growing conditions we are renowned for in Robertson. We also had the first of our Summer storms, an East Coast Low which stayed for 2 days and drenched us with over 300mm of rain, filling our dams and raising the water table in the escarpment aquifer such that we watched one of Natures marvels as the water levels in the dams continued to rise weeks after the rain event as the natural springs in the dams push crystal clear water to the surface.

With conditions just perfect for lush Summer pastures, we turned our attention towards our next harvest of Angus beef. By utilising supplemental feeding of Millet and Oaten Hay in addition to our improved forage pastures, we have been able to provide the highest quality protein and energy needed to sustain and nourish our breeding cows while simultaneously fattening and finishing our Angus steers, contributing to the premium marbling and flavour expected from quality Angus beef.

While we did take advantage of the particularly strong prices for beef cattle leading up to Christmas by selling some of our cattle, we also held back our best Angus steers for our Beef Box Harvest in March. So, for those of you who have registered with us on our website, you will receive Early Bird notification soon of our online ordering system opening so you can place your orders with us via our secure ecommerce website. We are expecting some high demand on our range of Beef Boxes as each has been carefully crafted to offer the best of premium Southern Highlands Angus Beef in a range of cuts to give you an outstanding gastronomic experience.

“Harvest” Grazing Event 

While we are offering a direct from farm-to-door delivery service in the Sydney metropolitan areas, we are also offering our Beef Box customers an exclusive on-farm experience.  For anyone interested, we are extending an invitation for you to pick up your Beef Box from the farm. 

Start your day by visiting us at Clavering Hill in Robertson to pick up your pre-ordered Beef Box, where we will have the BBQ grill sizzling with free tasting platters featuring our Angus Beef sliders and thick sliced Angus Beef sausage, a sample of the locally brewed Highlander range of beers and seasonal produce featuring pasture-raised eggs, red soil potatoes, farm grown rhubarb and local raw honey for purchase. The fire pit will be alight and we will share with you our thoughts on our regenerative farming practices and why this makes a difference in producing premium quality food.

After a walk around the gardens and orchard at Clavering Hill, you might decide to head back into Robertson for a quick selfie with the Big Potato, now transformed into the Pink Pig in celebration of the 30th anniversary of the filming of the blockbuster movie “Babe” right here Robertson. Take a walk around Robertson's galleries and artisan shops ~ a variety of specialty stores spanning Bonsai art, the Highland Hattery, galleries, antique stores, cafes and of course the famous and historic Robertson Public House & Kitchen where you can enjoy a delicious meal or snack, local beers or wine and some banter with a local farmer or two.

The Clavering Hill Harvest Grazing Event is scheduled for Saturday 14th March from 11am - 1pm so please let us know when placing your Beef Box order if you would like to attend.
