Robyn WhymanThe seasons have changed dramatically across the Southern Highlands and Summer’s long, slow days and crystal clear nights have been replaced by vibrant Autumnal colours and a chill in the air.
At Clavering Hill this means that its time to announce our Winter Angus Beef Harvest - our range of fresh, pasture raised Angus Beef boxes, featuring an assortment of beef cuts designed to offer a gastronomic experience to match a cold Winter's night. Whether it’s rich, bold flavours for roasting or thick, juicy steaks for the flame grill ~ our selections are sure to please. All that’s left to do is find that perfect match from the cellar for a five star dining experience at home.
Our website will open on June 8th and like last time ~ its first in best served with all the available selections.
Our Summer Harvest sold out in less than 10 days and we loved hearing about your culinary experiences at home. So much so that we thought we should share some of your feedback on our pasture raised Angus beef.

The paddock report for our Winter Angus Beef Harvest shows every indication that it will be even more flavoursome.
Pasture growing conditions from late January through until mid April have been ideal, with ample forage across our paddocks. We were also able to secure some fresh, second cut Millet from our pasture supplier on the NSW South Coast. It was very rich pasture, with a great seed head, so we consistently fed this out to both our breeding herd and our steers over the Summer.
We are also planning to Dry Age our Winter Angus Beef Harvest for at least 14 days, which should help develop the flavours even more so in this Harvest.

Our beef boxes can be delivered throughout metropolitan Sydney via our cold-chain courier, ensuring your beef leaves our farm and arrives at your door the very next day.
We'll also be holding another Farm Open Day for those who would like to collect their boxes from the farm. It's a chance to see where your beef was raised, sample some of our beef, take a walk around the property and spend some time with us at Clavering Hill.
